How To Make the Perfect Vegan Holiday Dinner

If you’re vegan or catering for vegans this holiday season and need a dish to impress, look no further. If you need the perfect, creamy vegan macaroni and cheese or mashed potato dish, this is the recipe for you.


Macaroni and cheese and mashed potatoes are staple sides at many holiday events. Making a delicious vegan macaroni and cheese may seem like a daunting task, but for this recipe you don’t need any cashews, carrots, potatoes, or blenders. Mashed potatoes can be made vegan using vegan milk and butter.


Are you ready to wow your family and friends this holiday season? These recipes are simple and may make your guests second guess that the dish is vegan.


VEGAN HOLIDAY DINNER


Servings: 2-4

Time: 1 hour

Tofurky

½ cup olive oil (or oil of choice)

½ cup vegetable broth

2 minced garlic cloves

1 tsp mustard powder

1 cup macaroni

2-3 potatoes

2 ½ cups unsweetened rice milk (or alternative milk of choice)

2 tbsp vegan butter

2 tbsp salt

1 tbsp pepper

1 cup vegan cheddar cheese

2 tbsp nutritional yeast


Tofurky Baste

For your Tofurky baste, you can choose from a variety of options. It can be simple to substitute a vegetable broth to baste. I used ½ cup of olive oil, ½ cup of vegetable broth, 2 minced garlic cloves and 1 tsp mustard powder. I followed the instructions on the tofurky package to bake it. Remember, defrost your tofurky 24 hours before you plan to make it. If you don’t, you can follow instructions on the package to double the time it bakes in the oven.


Vegan Macaroni and Cheese

Sometimes, you don’t need fancy kitchen tools or multiple ingredients to make a vegan mac and cheese. This recipe is only 4 ingredients: 1 cup macaroni, 1 ½ cups of unsweetened rice milk, 1 cup vegan cheddar cheese and 2 tbsp nutritional yeast.


Boil 1 cup of macaroni in 2 cups of water until macaroni is cooked through, then strain. With the pot on light-medium heat, add 1 ½ cups of unsweetened rice milk, 1 cup vegan cheddar cheese, and 2 tbsp nutritional yeast. Stir until cheese starts to melt, and then add in macaroni noodles. Turn the pot to low heat and stir for 5-10 minutes.


Mashed Potatoes


Wash, cut, and chop 2-3 potatoes and put to boil. Strain potatoes when they are done (you can tell they are done if you can stick a butter knife through the potato easily). On medium heat, add 1 cup of rice milk, 2 tbsp vegan butter, 2 tbsp salt and 1 tbsp pepper. Add potatoes and mash them until they are smooth.

Once you are done, you may serve and enjoy!
